[Recipe] Banana Coconut Muffins with Coconut Streusel Toppings Using Airfyer
I recently had an obsession with everything coconut - from dessicated coconut to coconut milk and coconut oil.
Coconut oil is known for various benefits, such as for increasing "good" cholesterol, controlling blood sugar, and promoting shiny hair & healthy skin (source). Something to be aware of when cooking with coconut oil is its lower smoke point compared to most kitchen oil, so cooking/ baking temperatures needs to remain at/ below medium temperature, i.e. 170 degrees Celsius.
I loved the aroma of coconut and freshly baked muffins filling the kitchen when I made these. I am sure you will love them too! Best eaten when still warm. :)
Banana Coconut Muffins with Coconut Streusel Toppings
Yield: 5 muffins
Ingredients
(A) Dry ingredients
55g flour (top flour preferred)35g dessicated coconut
1/2 tsp salt
1/2 tsp baking soda
(B) Wet ingredients
1 egg, beaten60g coconut oil* (other types of oil are fine too)
50 sugar (caster sugar preferred)
1/4 tsp vanilla extract
1 large ripe bananas
(C) Coconut streusel toppings
4 tsp dessicated coconut
4 tsp flour
3 tsp coconut oil
1 tsp sugar
1 tsp sugar
Directions
1. Preheat.
Preheat airfryer at 150 degrees Celsius for 5 minutes.
2. Combine (A).
Combine all ingredients in (A) together. Set aside. These are the dry ingredients.

3. Mash.
In another bowl, mash the bananas with the back of your fork.
4. Combine (B).
Combine the bananas with the remaining (B) ingredients to form the wet ingredients.
5. Combine (C).
6. Mix the batter.
Add the wet ingredients (B) into the dry ingredients (A). Fold in gently.
Tip:
Do not overmixing the cake batter. Otherwise, the cough will become tough cakes to the gluten.
7. Pour.
Pour into the muffin cups till 2-thirds full. Top generously with the coconut streusel.
8. Bake.
Bake in airfryer at 150 degrees Celsius for 12 min till golden brown. If needed, continue baking for 3 to 5 min more.
Best served warm with hot tea. Enjoy!
