[Recipe] Sweet Potato Wheat Loaf with Sunflower and Pumpkin Seeds

I love how cheap and nutritious sweet potato is. A root vegetable, it is high in Vitamin C to boost our immune system, Vitamin D to build healthy bones, potassium to regulate heartbeat and so forth. Importantly, for those with a sweet tooth, the natural sugars in sweet potato do not result in sugar spike in our bodies.

In the name of health, here's another wheat loaf recipe - Sweet Potato Wheat Loaf with Sunflower and Pumpkin Seeds. Do note that this loaf has quite high proportion of wheat flour. So for those who innately dislike the taste of wheat, you can adjust this recipe with plain flour instead. Feel free to also change the type of nuts or seeds if you wish.

Sweet Potato Wheat Loaf with Sunflower and Pumpkin Seeds
Philips Breadmaker HD9045
Yields 750g loaf

Ingredients
(A)
185ml Hokkaido milk (normal milk is okay too) 
1 egg, beaten 
30g oil
1/3 tsp salt
30g sugar
150g sweet potato 

(B)
200g whole wheat flour, sifted (see photo below)
160g top flour/ cake flour, sifted
1 tsp yeast
(C
70g pumpkin seeds
70g sunflower seeds


Directions

1) Boil the sweet potato. When cooled, mash it up. 

2) Put all ingredients in (A) into the baking tin, in the above sequence.

3) Proceed to add all ingredients in (B) into the baking tin, in the above sequence.

4) Use Setting 5 (Sweet bread mode), Medium crust, 750g. Start baking. 

Tips: The amount of moisture in sweet potato may vary. Should the batter is too wet or dry, feel free to add more flour or milk respectively.

5) Midway, there will be a short beep. Put all the ingredients in (C) in. 

6) After a total of 3h 22 min (i.e. starting from Step #4), a continuous beep will be heard. The loaf is  now ready. Twist the baking tin gently to remove it from the machine. 

7) Turn the baking tin gently upside down to remove the loaf. Lay the bread out to cool for at least an hour. Store in an airtight container when fully cooled to maintain freshness. Enjoy!
