Orange Cake with Chocolate Chips Using Air Fryer
I was to go for a classmates' gathering and they had heard me raving about the airfryer before. Wanting to let them try a cake and with lots of mandarin oranges at home, I decided to try an orange cake with chocolate chips - something healthier and refreshing for an afternoon tea gathering. The cake was really yummy and moist.
Here's the recipe:
Recipe
Yield: One 6 inch square cake
Ingredients
120g top flour
70g castor sugar
2 eggs
75g oil
70g fresh orange juice (approximately 2 mandarin oranges)
1 to 2 tsp orange zest
dark chocolate chips, raisins or nuts
Directions
1. Preheat the airfryer at 160 degrees for 10 min.
2. Break the eggs into a bowl. Add castor sugar and use a wooden spoon to beat gently until well-mixed.
3. Add oil and orange juice into #2, and mix well.
4. Sift flour.
5. Add #3 into the flour. Mix well and pour into the cake pan.
Tip: I always got confused - is it add wet ingredients into dry ones, or vice versa - and then I will just pour into the bowl which was bigger. Heh. Anyway, Mr Google said that we should pour wet into dry to avoid flour clumps.
6. Pour a little flour over the chocolate chips, raisins or walnuts so they don't sink. Add into the cake pan.
7. Cover the baking pan with aluminium foil and poke a few holes. Airfry at 160 degrees for 20 minutes.
Tip: This method is a saviour - it prevents the cake from being heated unevenly or having a dry top-surface. The last thing we want is to have a burnt cake top and uncooked middle. Before I learnt this method, I would keep having cakes that were ugly and poked all over because I had to check for doneness :(
8. Remove the foil and airfry for another 4 - 6 minutes to give the cake a nice healthy brown surface. Test its doneness using a toothpick. If it's ready, the toothpick should come out clean.
9. The cake is now ready to be served. I love the nice fresh orange colour and it was really moist inside too!
2-thirds for my classmates and the other 1-third for my parents. Yum yum!

ReplyMay I know what type of oil did you use? I used canola oil, turned out oil smell too strong.
